Question about switching majors in college?

So right now, i am a junior in high school, getting ready for college admissions. I want to get into the NC state engineering program. However, that is one of the more challenging majors to get accepted into (high gpa, etc) and i have some doubt about getting in. My question is, would it be safe to apply to another field at NC state, such as textiles or education, which may be easier to get accepted, and then transfer to the engineering field? Is it that easy, or is there a catch? What exactly does the process of switching majors look like? Thanks.
